Pelatihan pembuatan kopi biji pepaya sebagai upaya pemanfaatan limbah industri di Desa Tirtonirmolo, Kasihan, Bantul

Abstract

Tirtonirmolo Village, Kasihan Subdistrict, Bantul Regency has the potential of papaya industry by processed it into papaya geplak, managed by P2WKSS (Peningkatan Peranan Wanita Menuju Keluarga Sehat Sejahtera). The industry produces waste in the form of papaya skin and seeds which are not utilized properly and are wasted. this community empowerment based service program will process papaya seed waste into non-caffeine, high antioxidant, and vitamin C papaya seed coffee. Papaya seeds that have been separated from flesh are first cleaned by washing. After that, the papaya seeds are dried in an oven for about thirty minutes at 100 ℃ to clean the membrane. Drying could also be done by sun for 1-2 days depending on weather conditions. The next step is roasting approximately 45 minutes with a small fire stove until the papaya seeds are completely dry and give off a distinctive aroma and bitter taste. After drying, the papaya seeds are allowed to stand for a moment to remove the moisture and then blend until smooth into powder. With this simple processing and easy equipment it is hoped to be applicable by all P2WKSS members in Tirtonirmolo Village.
